➢ Milk (and its products thereof) plays a vital role in the diet of many different ethnic groups of people and the production of milk and dairy contributes to their economic activity. ➢ The quantity of milk produced and consumed varies between countries worldwide, with an overall increase of about 1% in milk production expected in 2025 compared to the previous year (OECD & FAO, 2025). ➢ Global milk production relies on cow’s milk (81%) , followed by buffalo milk (15%) and combined production of goat, sheep, and camel milk (4%). ➢ Unique nutritional composition and potential biological activities of donkey milk (i.e., good substitute for infant feeding). ➢ Donkey milk accounts for less than 0.1% of the global milk production .
