Why are biogenic amines important? • BAs have been studied extensively because of toxicological effects originated from their vasoactive and psychoactive properties. • Putrescine/cadaverine can enhance toxicity of HIS and TYR although they are not toxic • During the storage of food, if the bacterial activities are higher, hygienic quality of the product decreases, resulted in production of certain amines. • Determination of BAs is also essential from the quality point of view of food and food products. • BAs even might serve as indicators of poor hygienic quality in seafood.
