Conclusions & practical take-aways • WPN–FOS complex coacervation works : stable emulsions (ζ ~ −65 mV) and reconstitutable microcapsules (ζ ~ −49 mV; D_h ~ 230–240 nm). • Encapsulation efficiency for curcumin is high in T1 (1:2, 70:30) and T6 (1:4, 30:70), approaching ~98% and ~96% respectively; these also show the largest curcumin content (≈2.5 mg/g). • Application outlook: ready for functional foods and supplements, leveraging FOS prebiotic value and WPN clean-label status. • Next steps: scale-up spray-drying, oxidative/light stability testing, and bioaccessibility assays in dynamic GI models. 13
