Research Projects for the Support of Faculty Members and Researchers (Project ID: 3591) Project Goals BAC2FOOD 6 The biofunctionality of bioactive compounds (BACs) linked to process, the food matrix, and digestion is an active scientific field. The objective of this research was to investigate the recovery of selected BACs, in terms of yield and bioaccessibility, with the use of novel technologies, in order to: (i) optimize BACs recovery from plant and animal origin by- products, (ii) evaluate the incorporation of BACs in food model systems, (iii) assess the biofunctionality of BACs-enriched food model systems and final product prototypes
