BAC2FOOD : Study and modelling of novel processing of foods to optimize nutritional functionality and bioaccessibility – The enginomic approach PI: Professor Dr. PETROS TAOUKIS 2nd Call for H.F.R.I. Research Projects for the Support of Faculty Members and Researchers (Project ID: 3591) Project Structure- PILAR 1: Assessment of yield of food bioactive compounds (BACs) obtained by novel technologies 9 Objectives: The objective was to study the recovery (in terms of yield) of bioactive compounds (BACs) from food processing by-products including (i) phenolics from olive pomace, (ii) carotenoids from tomato skins and seeds and (iii) ω-3 fatty acids from fish processing discards, using novel technologies. Task 1: High pressure assisted extraction of BACs (HPAE) Task 2: Pulsed electric fields assisted extraction of BACs (PEFE) Task 3: Microwave assisted extraction of BACs (MAE) Task 4: Comparative assessment of HPE, PEFE and MAE recovery of BACs OVERALL OBJECTIVE: Successful recovery of BACs using novel technologies
