How much curcumin is in the powders? • Calculated content (µg curcuminoid per g microcapsule): • Curcumin (C): ranges 1 011–2 536 µg/g , with highest values in T1 (2 536 µg/g) and T6 (2 492 µg/g) . • DMC: 32–624 µg/g (lowest in T4). • BDMC: 348–851 µg/g (T1 highest). These values track the EE% pattern and confirm that T1 and T6 best retain the dominant curcuminoid (C). 11 • At 1:2 load, a protein-rich wall (70:30 WPN:FOS; T1) forms a strong interfacial film that traps and protects all curcuminoids (also the highest BDMC ). • At 1:4 load, a FOS-rich wall (30:70; T6) gives a tighter/glassy matrix that best preserves curcumin (C) , while protein-rich, high-load systems ( T4 ) allow major loss of DMC .
